There’s so many new restaurants that I need to try out! I was gone for four years and now that I move back to Portland, it’s crazy! Café Yumm! is most certainly on the top of the list. Especially after a friend of mine (who blogs over at Luminary Havens) turned another friend of mine onto this sauce and she made it for me at our weekly “friend night” dinner. Oh wow, it’s good. Really good. Like lick out the bowl and the spatula good. And it’s fast to make. Score one for 30 minute meals! Rachel Ray, eat your heart out.

I did have to change the original recipe around a bit to make it anti-inflammation diet friendly but it wasn’t much. You’ll want to serve this on brown rice or quinoa with your favorite veggies cut up on top. Some of my favorites are: cucumber, onion, avocado, and fresh cilantro, and more beans. I’ll grill up a chicken breast, especially if I’m eating it on brown rice, and put on top as well. But really, this could be used to top just about anything - salad, steak sauce, mock chicken schwarma sauce (the garlic lends itself to that flavor already) - the list goes on and on.
The has become my go-to “I don’t want to cook tonight” menu item. I usually have everything in the fridge and pantry so it doesn’t cost me a dime and I can clean out the fridge of veggies that are on their last leg. I like these meals - no planning, no shopping, just come home and eat. And then I can work in my garden. That’s really all I want in life, anyway.
